Baked Oatmeal – a super easy and very healthy Amish recipe adaption! This dish takes about 5 minutes to prepare and 35 minutes to bake. You can substitute more honey for the molasses if you prefer. The mix can also be made ahead of time and left in the fridge for a few days or the freezer for quite a while.
This recipe makes enough to feed six kids and one adult. If my husband is home there isn’t quite enough for everybody and I have to double the recipe. This is nice because we get leftovers for a snack in the afternoon!

This recipe originally called for 1 cup brown sugar. Since we are weaning ourselves off of unnatural sugars to see if that assists in calming Matthew’s(5) eczema we substituted the honey and molasses. Not quite as sweet but definitely delicious! I even like it better this way.
What’s in it?
3 1/2 cups of regular oatmeal
1/2 cup honey
1/4 cup molasses
2 tsp cinnamon
1/4 cup molasses
2 tsp cinnamon
2 tsp baking powder
1 tsp salt
1 egg
1/2 cup melted butter
1 cup milk
1 tsp salt
1 egg
1/2 cup melted butter
1 cup milk
How To Prepare It
Mix all ingredients together in a mixer or by hand until thoroughly combined. Pour into a greased brownie pan and bake for 30 to 35 minutes or until light brown ‘baked’ color appears on top. You can also make muffins out of these, just lower your baking time to about 20 minutes.
Some nice additions to this are:
3/4 cup dried fruit
1/2 cup chocolate chips
1/2 cup nuts
1/2 cup chocolate chips

or whatever you think will be good. Get creative!
***Hint – if using raisins try letting them soak in water for at least 1/2 hour before adding them. This plumps them up nicely and gives them a really juicy, sweet taste when you bite into them. Just make sure to drain them before you add them into your recipe.

Hi there, I am an occasional visitor to your blog. I can’t even remember how I found it! Anyway, thanks for sharing this recipe- I’ve never tried baking oatmeal before, and I look forward to seeing if my 18 month old and 3-year old like it!
